Grilled fish with peach cucumber salsa

I know that you might read the and think it sounds weir but I promise you that is super delicious!!! When peaches are not in season you could use, pineapple or mango, which would be equally delicious!

Ingredients

  • 5 pieces of halibut ( mahi mahi or cod works great as well, I think salmon would be really nice also)
  • 1 large peach
  • 2 small cucumbers
  • 1 jalapeno
  • 1/4 cup of fresh cilantro
  • 1 lime
  • 2 tbsp of olive oil
  • 2 tbsp of avocado oil
  • Fish seasoning: 1 tsp pf salt and pepper, 1/2 tps of paprika, 1/4 tsp garlic powder

Directions

Combine the fish seasoning. Pat dry the fish spray wth olive oil and sprinkle the seasoning on top. Leave it on a plate on the side so it gets to room temperature. In a medium pan, heat up some avocado oil and grill the fresh for 4 minutes each side (this depends on the thickness)  and or until it is cooked inside. I like my fish crispy outside and flaky in the middle. So once I cooked it on both sides, I put on a plate covered and leave for 3-4 minutes to rest.

Meanwhile cut the peaches, cucumber and jalapeño (remove the seeds so it is not too spicy) into really small pieces and get them in a bowl. Zest and juice the lime and add to it with the chopped cilantro, olive oil and some salt and pepper.

Once the fish is cooked and the salsa is ready assemble and enjoy. I served this in a bowl with cauliflower rice, corn, avocado, yellow pepper and cherry tomatoes. Honestly this would be good on tis own or with whatever you feel like adding.
