Grilled halloumi salad with peaches, tomatoes and avocado

This was by far my favorite salad of summer 2022. I had something similar when I traveled to Europe and was able to recreate it back home!
Cut the halloumi in 1/2 thick slices. Grill in a pan for 2-3 minutes on high on each side.
Meanwhile slice the peach, tomato and avocado. Make the vinaigrette by combining all the ingredients in a jar (lemon zest and juice) and whisk until emulsified.
Arrange all the halloumi, peaches and avocado on a plate. Drizzle the vinaigrette (you will have too much of it but you can keep the rest for another time). Chop the fresh basil and add to it.
