This summer salad is really surprising. Halloumi has a firm enough texture that you can grill it. I love that it has a crunch to it and taste delicious with summer fruits tossed in.

Ingredients

  • 1 package of halloumi cheese
  • 1 cup of Israeli couscous
  • 2 medium summer squash
  • 1/4 cup of blackberries
  • 1/4 cup of pomegranate
  • 1/3 cup of olive oil
  • 1 lemon
  • 1 tsp of cumin
  • Salt and pepper
  • Micro greens to garnish

Directions

Cook the couscous according to packaging instructions.

Slice the halloumi and season with cumin, salt and pepper. Heat up 1 tbsp of olive in a grilling pan and cook the cheese for 2 minutes on each side, until you get a nice golden crust. Remove the cheese an a plate and using the same pan, cook the squash until you get a good char on both side (4-5 minute total). Chop the veggies roughly.

When the couscous is cooked, spoon it in the bowls, add some of the squash, pomegranate and blackberries. Top with the halloumi and drizzle some olive oil and lemon juice.

I like adding some salt and pepper and micro greens fro a beautiful finish.
