
Ham and Cheese Muffins

These are perfect for school lunches, breakfast or even a quick snack. They freeze nicely, so I always prepare lots of them and store them in the freezer.
Last week my kids had these for breakfast with a fried egg on top and loved it!

Preheat oven to 350-degrees F.
Grease a muffin pan for 12 muffins. In a large bowl, whisk together dry ingredients: flour, baking powder, salt and set aside.
In a separate bowl whisk together milk, eggs, and oil and maple syrup.
Add wet ingredients into dry and mix until just combined. Do not over mix.
Stir in ham, cheese and spinach until just incorporated.
Distribute batter evenly into 12 muffin cups, and bake at 350-degrees F for 20 minutes, or until a cake tester or toothpick comes out clean.
