Tray bakes and one pot meals are my favorite way to make dinner, easy, almost no washing dishes and very little hands on... For busy nights these are life savings!

Ingredients

  • 4-5 chicken thighs
  • 2 cups of baby potatoes, washed and cut in 2
  • 1 cup of cauliflower florets
  • 1 purple onion, peeled and cut in 6
  • 2-3 dried figs
  • 1 bunch of Brussels sprouts
  • 2 tsp of olive oil
  • 2 garlic cloves
  • Fresh thyme

Directions

Preheat the oven at 400F.

Line a baking sheet with parchment paper and assemble all the ingredients on it. Drizzle the olive oil all over, spindle the thyme, sone salt and pepper.

Place in the oven and cook for 40-45 minus until chicken is cooked through (inside temp should be at 160F).

When it is cooked, take out of the oven, cover loosely and leave it to rest for 10-15 minutes and enjoy.
