
Hash brown zucchini waffles

This has been the hit of the month with my family...I think the fact that I made it as waffle was really attractive to the kids. Great for breakfast, brunch or even a school lunch, this is really easy and super delicious!

Heat up your waffle iron, grease it and scoop 1/3 cup at a time of the batter and cook for 2-3 minutes, until golden brown and crispy.
Repeat with the rest of the batter. My waffle iron makes kind of small sizes, so I ended up with 12 of them.
They keep in the fridge for a couple of days and in the freezer for a couple of weeks.
I made a sandwich for Harry with turkey bacon, turkey meat, avocado and mayo and some cheese as well. For me I had an open faced avocado toast with fried egg on top... You can go so many directions here with any kind of meat or veggies, burrata, cheese and it is really delicious.

They look so good i think I’m going to make them tomorrow if I do can I eat them the same so or do I have to freeze them first?
You can eat them right away, I only make extra and freeze the leftovers for another time… I always do that, I cook once for 2 meals 🙂
