Healthy popcorn chicken

This pairs really nicely with the veggie curry, or on top of the salad with the sweet potatoes, or even simply with rice! It tastes absolutely delicious an di super simple to make.

Ingredients

  • 2 boneless chicken, cut into small bite size
  • 1 cup of almond meal
  • 1/2 tsp of garlic powder
  • 1/2 tsp of paprika
  • 1/4 tsp of ground mustard
  • 1/4 tsp of cinnamon
  • 1 tsp of olive oil
  • 2 large eggs
  • Salt and pepper to taste

Directions

Preheat the oven at 400F.

Combine the almond meal, garlic powder, paprika, ground mustard, cinnamon, 1/2 tsp of salt and 1/2 tsp of pepper and mix well.

Whisk the eggs in a separate bowl.

Dip the chicken in the eggs and transfer to the almond meal until nicely coated.

Place the chicken pieces on a lined baking sheet.

Bake in the oven for about 10-12 minutes, turning halfway. Cook until chicken is cooked thought, and the coating is golden crisp!
