Homemade ricotta

Who knew ricotta was so easy to make.... You just need a few ingredients and patience!!!

Ingredients

  • 1/2 gallon of whole milk
  • 1/3 cup of lemon juice (or white wine vinegar)
  • 1 tsp of salt
  • Optional: add dried or fresh herbs, lemon zest, spices,...

Directions

Warm up the milk up to 200F. It should start to foam and gently simmer on the sides, do not let it boil.

Add the lemon juice and salt, turn the heat off, stir gently and leave to rest for 10-15 minutes until it curdles.

Strain the curds through a strainer doubled with cheese cloth and wait. You can leave it for 15 to 60 minutes, the longer the thicker your ricotta will be.

Discard the liquid part and transfer the creamy cheese in a jar and store in the fridge.
