Honey garlic shrimps with cauliflower fried rice

My kids love shrimps and alway ask for them. I have been wanting to try something with this kind of sauce for a while and thought it whirl work perfectly well. I am serving git with a cauli rice fried rice using frozen veggies.

Ingredients

  • 1 lb of shrimps (I found wild ones peeled form famers market)
  • 1/4 cup plus 2 tbsp of soy sauce
  • 2 garlic cloves, crushed
  • 2 tsp of honey
  • 1 pinch of chili flakes
  • Salt and pepper
  • 3 cups of cauliflower rice
  • 1 bag of frozen veggies of choice (I used a mix of corn, edamame and peas)
  • 4 tsp of avocado oil
  • Salt and pepper
  • Optional: 2 green onions

Directions

Combine the honey, 1/4 cup of the soy sauce, garlic and the chili flakes with the shrimps and leave it to marinade for 15 minutes.

Meanwhile sauté the cauliflower rice with 2 tsp avocado oil for 2-3 minutes and add the thawed frozen veggies. Mix and when it starts to brown a little, add the soy sauce and some pepper. Taste and adapt seasoning if needed, I also added some chili flakes here because I like it. You'll also have the sauce form the shrimps to drizzle on top.

Remove the shrimps form the marine (but keep it). Heat up the other 2 tsp of avocado oil and sauté the shrimps for 2 minutes on each side then add the sauce and cook for another minute or 2 until it thickens and bubbles. Chop up some green onions and sprinkle on top and enjoy.
