I love fish, any kind, raw, grilled, poached you name it... I think it is so healthy and delicious. I am always on the hunt for new recipes that my kids will appreciate (which can be tricky with fish).... This one was successful, yay!

Sprinkle salt and pepper on the fish. Heat up 1 tbsp of olive oil in a pan and place the fish in the pan skin up. Let it cook for 2-3 minutes WITHOUT moving it. It's important to be patient here and not touch the fish, this is what will give it a nice crust. Flip and do the same on the other side. Et voila, easy and delicious!
I served it with mash potatoes, sweet corn and green beans.... Complete and delicious meal!
