This is one of the easiest summer minestrone ever. The insta pot does almost all the work for me. If chopping is not your thing, you can even find ready mirepoix in most supermarket. If you don't have an insta pot, just do it on the stove, it will work great as well. It will just need to cook a bit longer.


  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 large summer squash ( or zucchini), washed and diced
  • 1 cup of corn
  • 1 parmesan grind
  • 1 cup of cherry tomatoes, washed
  • 1-2 bunches of kale or spinach
  • 4-5 cup sof stock
  • Salt and pepper
  • 2-3 tbsp of olive oil


In the insta pot, on sauté mode, toss together the carrots, celery, onion with the olive oil for a couple of minutes. Add the squash and cherry tomatoes and stir for 2-3 more minutes.

Add the stock, parmesan and secure the lid, and press on the pressure cooking mode for 5 minutes.

When it is done, release the pressure ( watch out no tut burn yourself) and toss in the corn and spinach. Remove the parmesan grind (or what is left of it) and taste to adjust seasoning. I always season after with this one since I put the cheese in it and I don't want it to be too salty.
