I need something easy and healthy today and kids wanted taco Tuesday. So I thought why not make a compromise and do a clean version of a tortilla soup. I turned out super delicious and since I cooked it in my Insta pot, it was really easy and fast!

Ingredients

  • 2 tbsp of olive oil
  • 1 medium onion chopped
  • 1 large carrot, peeled and cut into small cubes
  • 2-3 tsp of taco seasoning
  • 28 oz can of diced tomatoes
  • 3 – 4 chipotle peppers in adobo, chopped and with the sauce from the can
  • 4 cups of RAW cauliflower rice
  • 1 16oz can f black beans
  • 2 cups of frozen corn
  • 3 tbsp of tomato paste
  • 4-5 cups of veggie stock
  • Garnish: tortilla strips, cilantro, lime juice, avocado cubes, queso fresco, shredded mexican cheese

Directions

Set the Instant Pot to the “Saute” function on low.  Once it heats up, add the oil, carrots onions.  Caramelize for 2 – 3 minutes. Add the taco seasoning to get it super fragrant and have max flavor.
Add the remaining ingredients to the Instant Pot.   Give it a good stir and add a few pinches of sea salt & pepper to taste.

Set Instant Pot to “Pressure Cook” and place lid on.  Make sure the top is set to Seal and cook on HIGH for 5 minutes. When the timer goes off, release the pressure, then open the Instant Pot.
Garnish with fresh cilantro, a squeeze of lime juice, some avocado and tortilla strips and season to taste with sea salt & pepper.
