I cannot find an easier way to make delicious eggs than this.... The beauty is that you can adapt to any flavor you like. You could add salsa for a more Mexican inspiration, keep it plain or add cream, gruyère and bacon for a French twist... I mean make it your own and add you favorite toppings!

Ingredients

  • 4 eggs
  • 4 tbsp of pesto sauce (store bought)
  • Salt and pepper
  • 4 slices of prosciutto

Directions

Preheat the oven at 350F.

Grease with olive oil two small ramekins. Crack two eggs in each and add some pesto sauce, salt and pepper. Place on a baking sheet with the prosciutto and bake for 12-15 minutes.

You might have to remove the prosciutto before the eggs when it gets crispy enough (about 10minutes). Now for the eggs this is very personal, I like mine runny and just cooked so I took them out at exactly 12 minutes.... Depending on how you like yours, you might want to check it out and leave them less or more.

Break little pieces of the baked prosciutto and sprinkle on the eggs. Enjoy on their own or dip in some crunchy toasts, you will no the disappointed!
