Italian Cauliflower Rice

This is the perfect side dish to chicken, steak, fish or even simply on its own. I served it with chicken last night and had mine just with sauté mushrooms because I did not feel like eating meat and it was delicious!


  • 4 cups of caulirice (store bough or see for recipe on the blog)
  • 1 cup of cherry tomatoes, cut in 2
  • 3 bunches of baby spinach
  • 3 garlic cloves, minced
  • 1 pinch of chili flakes (optional)
  • 1 small onion, chopped
  • Salt and pepper to taste
  • 2-3 tbsp of olive oil


Sauté the garlic and chili flakes in the olive oil. After 2-3 minutes add the tomatoes. Stir for a couple of minutes, until the tomatoes start to soften. Then add the caulirice and mix together.

After it is all nicely combined finally toss in the spinach and cook until just wilted, 1-2 minutes, taste and adjust the seasoning and enjoy!!!
