This delicious chicken is infused with the flavors of olives, tomatoes and fennel which mix nicely while cooking!


  • 1 whole chicken, cut into parts ( or 2 chicken breasts, bone in, 2 thighs and 2 drumsticks)
  • 1 cups of green olives, pitted
  • 1 fennel, sliced, greens removed
  • 1/2 cup of cherry tomates, cut in 2
  • 1-2 tbsp of olive oil
  • Salt and pepper


Preheat oven at 425 F.

Place the chicken parts in a baking dish. Add the olives, tomatoes and fennel and drizzle everything with olive oil. Sprinkle with salt and pepper ( I did 1 tsp of salt and 1/2 of pepper). Cover with foil and cook for 20 minutes ( this will steam nicely the veggies). Remove the foil and cook for an additional 20-25 minutes, until chicken temperature reaches 165F.

Remove from the oven, cover again with foil and let it rest for a little while, 10-15 minutes!
