Italian kale salad with balsamic vinaigrette

When the weather gets nicer and springy, I eat salads almost everyday! I love all the different combinations of ingredients and dressing there are! Infinite possibilities!

Ingredients

  • 2-3 bunches of kale, stems removed and roughly chopped
  • 1 cup of rinsed chickpeas
  • 1 cup of cherry tomatoes, cut in 2
  • 2 small cucumber, peeled and cut into small cubes
  • 1/2 cup of shredded mozzarella
  • 1/4 cup of breadcrumbs (I like the crunch, but feel free to add nuts instead, such as one nuts or almonds or pistachios)
  • Dressing 2 tsp of balsamic vinegar, 1 tsp of lemon juice, 1/4 cup of olive oil, salt and pepper

Directions

Assemble all the salad ingredients in a a large bowl. Whisk together the dressing and drizzle all over the salad.

What I like about this salad is that kale lasts a few days even with the dressing....

The trick is to add little dressing at the time to avoid making it soggy!
