Italian pesto cauli rice bowl with arugula

It looks like I am feeling a lot like eating Italian food this week! This is as easy as it looks, it takes 5 minutes to make and is super satisfying and comforting!

Saute the green onion with the avocado oil for 2-3 minutes. Meanwhile clean the mushrooms and slice them before adding them to the pan. Toss for a couple minutes and pour in the cauliflower rice, some salt and pepper.
Finally add in the pesto sauce and simmer for another minute.
Place the arugula in a bowl and drizzle the olive oil and balsamic. Spoon the pesto rice on top and add the cherry tomatoes cut into small pieces. Arrange the avocado in the center and sprinkle some more salt and pepper.
You can always add a fried egg or burrata, or even grate some fresh parmesan as well. Super easy and delicious lunch bowl inso!
