Japanese udon soup

This has loads of veggies, udon noodles, seaweed with all together are all super nutrients rich... Everyone likes it around here...
Cook the noodles according to packaging instructions, drain when cooked and reserve on the side.
In a large pot bring 9 cups of water to boil with the kombu in it. Add the soy sauce, miso paste and fish sauce and whisk it all until diluted. Discard the kombu. Add the carrots, mushrooms and bok chop and cook for 2-3 minutes until tender. Add the noodles and tofu. Taste and adjust seasoning and maybe add more soy sauce, sprinkle some dried seaweed or sesame seeds, add green onion....
