
Kale and pear salad with feta

Directions
Wash the kale, remove the stem and roughly chop the leaves. Massage it if you want it to be more tender (this means just give it a good squeeze for a couple of time).
Finely chop the celery and thinly slice the pear (it works great with an apple or persimmon as well).
Assemble all the ingredients in a large bowl and drizzle the vinaigrette. Sprinkle some hemp seeds, it adds a nice touch!
Sometimes I also like to add dried cranberries, it pairs nicely with the flavors here!
