Kale and quinoa salad with tahini miso dressing

An easily assembled salad is almost my everyday lunch when I am home and need soothing delicious, quick and healthy! I don't always post them since sometimes it is just throwing a couple of things together... In this case, the dressing is so good that I had to share all the details!

Ingredients

  • 1 bunch of kale, stems removed and roughly chopped
  • 1 cup of cooked quinoa
  • 1 cup of cooked chickpeas
  • 1/3 cup of toasted pecans (toasting nuts add so much flavor, it is really worth it)
  • 1/2 avocado, cut into small cubes
  • Tahini Dressing: 1/3 cup of tahini, 1 tbsp of miso, 1 tbsp oo maple syrup, 2 lemon, 1 garlic clove, salt and pepper,

Directions

Serve the kale, quinoa and chickpeas in 2 different bowls. Add the avocado cubes and the pecans on top.

In a food processor blend all the dressing ingredients together until smooth, add up to 1/3 water to thin it out. Drizzle the vinaigrette on the salad and add some salt and pepper. Keep the remaining  of the dressing in a jar in the fridge for 1 week or so.
