Kale and quinoa salad

I was feeling like a salad nut needed something more than just veggies.. I added quinoa and cashews for something more filling and an added crunch!
Remove the stems of the kale and finely chop it. Roughly cut the snap peas and cucumber, as well as the tomatoes and avocado.
Combine the vinaigrette ingredients in a jar and shake until emulsified.
Peel the grapefruit and the avocado.
Transfer the kale to a plate, add the cooked quinoa, the chopped veggies, a few slices of the red grapefruit, lots of mint and the cashews.
Drizzle a few tsp of the vinaigrette and enjoy!
