Kale gnocchi lasagna

This is the new favorite in my house! You can make it vegan by omitting the sausages and add more beans, and switch the mozzarella for vegan cheese. I have done all versions and they were all good. Also feel free to use different kinds of gnocchis, they all taste delicious!


  • 1 bag of frozen kale gnocchi, thawed
  • 3 chicken sausages
  • 1 onion chopped
  • 1 can of white beans, drained and rinsed
  • 1 jar of diced tomatoes
  • 4 garlic cloves
  • 1 pinch of chili flakes (optional)
  • 2 cups of mixed kale and spinach (or any greens)
  • 1/4 cup of parmesan ( swap for 1-2 tbsp of nutritional yeast for vegan option)
  • 2-3 cups of shredded mozzarella ( or vegan cheese)
  • 2-3 tbsp of olive oil
  • Optional: chopped basil


Preheat the oven at 425F.

In a large (oven proof) skillet, sauté the onion, garlic and chili flakes with the olive oil. Add the sausages (removed form the case or roughly chopped) and cook until golden brown. Add the gnocchis, beans and greens and toss together for a couple of minutes. Pour the tomatoes and combine. Sprinkle the parmesan and the mozzarella and bake until cheese is bubbly and golden brown, for 20 min or so!

Serve and sprinkle some chopped basil for extra flavor!
