Kale salad and all my favorite fall flavors

When September is here and we start having winter squash and pomegranate and persimmons and all, it means that it is time to assemble all these delicious fall flavors into a beautiful salad!
Cut the delicata squash into 1/2 inches slices, toss wit 1-2 tbsp of olive oil, sprinkle some salt and roast at 400 for 15 minutes.
Meanwhile, make the dressing by mixing all the ingredients together.
Plate the lettuces, add the feta, pomegranate, walnuts and hemp seeds. When the squash slices are ready add them to the plates and drizzle the dressing. Sprinkle a bit more of salt and pepper on each and enjoy.
