I made a grilled greek spice chicken the other night and needed to figure out a side dish. Well since I love a good Greek salad this was a match made in heaven. I had so much kale in the fridge that day and wanted to use it so I tried a new version.

Ingredients

  • 1 bunch of kale, washed, stems removed and chopped
  • 1 head of romaine
  • 1/4 cup of pitted olives (I like both green or black here)
  • 1/2 small red onion, super thinly sliced
  • 3 small persian cucumber, washed
  • 1/3 cp of cherry tomatoes
  • 1/3 cup of feta
  • 2 tbsp of toasted breadcrumbs
  • Dressing: 1/4 cup of olive oil, 1 lemon, 1 tsp of dijon mustard, 1/2 tsp of oregano, salt and pepper
  • Salt and pepper to taste

Directions

Cut the cucumber into small cubes and the cherry tomatoes in 2 (or 4 depending on the size).

If you want the onions to be less spicy, you can let them sit in iced cold water for 5 minutes. Or you could also pickle them. Check the recipe on the blog if you want to give it a try.

Combine all the dressing ingredients in a jar and shake vigorously until emulsified.

Toss the kale with the 1/2 of the dressing and massage it for a few seconds so it gets more tender.

Add the cucumbers, onions and tomatoes and drizzle the remaining of the dressing. Finish with the feta and breadcrumbs and enjoy!
