Kale winter salad with purple sweet potatoes and pomegranate

I love having salads for lunch all year long. When the weather gets a bit colder I do need something a bit more comforting. By simply adding warm sweet potatoes bits to this kale salad it creates that warmth that I am looking for. The balsamic vinaigrette is really something as well!

Ingredients

  • 1 bunch of kale
  • 1/3 cup of cooked purple sweet potato cubes
  • 1/3 cup of pomegranate seeds
  • 1/3 cup of chickpeas
  • 1 carrot, julienned
  • 1/4 of avocado, peeled and cut into cubes
  • Optional: roasted veggies such as broccoli, cauliflower, Brussels sprouts,...
  • Vinaigrette: 1 tsp of both white balsamic and regular balsamic, 1/2 tsp of mustard, 1/4 cup of olive oil, salt and pepper

Directions

Thinly slice the kale and massage it with a bit of lemon juice and salt. Transfer to a bowl and add all the " toppings'. Whisk together the vinaigrette ingredients and drizzle over the salad. Add a pinch of salt and pepper and enjoy!
