Makes 1 large tart

This has been a tradition in my family as long as I can remember! When we first moved to the US I could not find this dessert anywhere so I decided to give it a try and make it myself. Today my family loves this dessert so much that we have it now and then throughout the year. If you like almonds and frangipane, this is gonna be a winner!!

  • 2 sheets of puff pastry, store bought thawed.
  • 1 cup of almond flour
  • 2 eggs, at room temperature (plus 1 more for the egg wash)
  • 5 1/2 tbsp of soft butter
  • 1/2 cup of sugar
  • 1/2 tsp of almond extract

Combine the butter, sugar, almond flour, almond extract and 2 eggs in a stand up mixer and beat until really smooth.

Place the first layer of the pastry on a baking sheet and spread the frangipane mix all over.

Brush the egg wash all around and place the second layer on top. Press with a fork on the edges to make sure it is glued together.

Gently make lines with a knife on the top layer to allow the pastry to rise. ( See picture attached and you'll understand what I mean) Plus it makes it look pretty.

Brush with egg wash and bake for 30-35 minutes until golden brown!

Our tradition wants to have someone find the hidden almond in the cake and be crowned king or queen. So when I make the frangipane I hide a whole almond in the mix and that makes all the fun for my kids!
