Late summer Sunday salad

When the end of cherry tomato season is here I make the most of it and eat these like candies and add them to everything. This salad is kind of a celebration to corn and tomatoes since I am going to have to wait a few months to have these bursting flavors again...
Wash and chop the lettuces and put into a salad bowl.
Peel the beet and cut into matchsticks. Thinly slice the radishes and cut the corn of the cob. Peel and chop the avocado and reserve on the side (I like adding it after I toss in the dressing).
Combine all the dressing ingredients in a jar and shake until emulsified.
Add all the cut veggies to the lettuce and toss with the dressing, sprinkle the almonds and hemp seeds and arrange the avocado bits all over. Season with some salt and pepper and enjoy.
