Lemon coconut custards

Makes 10-12 small ones

These are really easy to prepare and perfect for a summer dessert!


  • 1 can 14 oz full fat coconut cream
  • 2 lemon, zested and juiced
  • 2 tbsp of arrowroot powder
  • 2 tbsp o maple syrup
  • Toppings: blueberries, strawberries,...


Whisk the coconut cream and lemon zest in a small pan. Add the lemon juice and arrowroot powder and mix until completely combined. Pour in the coconut cream and maple syrup and stir with a wooden spoon until the consistency gets thicker (3-4 minutes).

Let it cool for a little while and transfer to small ramekins and place tin the fridge.

Add more zest as a garnish or some kind of berries and enjoy!
