Lemon Farro with avocado

This is a super delicious side and can easily become dinner on its own with some chickpeas, roasted chicken or grilled salmon. It is really easy to prepare and keeps in the fridge for a few days.

Ingredients

  • 1 cup of Farro ( I am using the quick cooking one)
  • 1 cup of chopped onions
  • 2 garlic cloves, minced
  • 1 carrot, grated
  • 2-3 tbsp of olive oil
  • 2 avocados, beeld an cubed
  • 1 lemon, zested and juiced
  • 2 cups of broth
  • Salt and pepper to taste

Directions

In a medium pot, sauté the onion, carrots and garlic with 2 tbsp of olive oil for 3-4 minutes.

Add the Farro and stir to coat for 1 minute and the add the broth, bring to a boil and then simmer and cover for 10 minutes.

Transfer to a bowl, add the lemon juice and zest, the remaining tbsp of olive oil and the avocado. Season with some slat and pepper and enjoy!
