
Levain chocolate chip cookies

The Levain Bakery chocolate chip cookies are probably my favorite in the entire world... Since I cannot go there anytime soon because of quarantine, I have attempted to recreate them based on what I found on the web.... It is not 100% but pretty close to it and super delicious, plus it makes me happy....

Preheat your oven at 410F.
In a stand up mixer, with the paddle attachment, cream the butter and sugar for 3-4 minutes. Add the egg and mix until completely combined.
Get the dry ingredients together and add to the batter until just combined, do not over mix it. Incorporate the chocolate chips and walnuts until well dispersed in the dough.
Form the cookies ( I made 4oz cookie balls) with your hands or an ice-cream scooper. Since I wanted to recreate a smaller version of the Levain Bakery cookies (that are 6oz each) I weighed them to be sure I would be close to it...
Line up a baking sheet and double it with another baking sheet upside down, so the bottom of the cookies do not burn, since we are baking them ay such high temperature.
Bake for 9-12 or until golden brown, these are gooey and soft cookies ( which is what I was looking for and so good!!!!
