These linguini with spinach and salmon is exactly the kind of easy and comforting food that I am craving right now!

Ingredients

  • 1 pack of linguini (whole wheat or brown rice works great as well)
  • 3-4 cups of baby spinach
  • 1 cup of ricotta
  • 3 garlic cloves, minced
  • 2 tbsp of cooking wine (optional but adds a really nice touch)
  • 1 lemon zested
  • 1/ cup of the cooking water from the pasta
  • 1/2 lb of smoked salmon coarsely chopped (or canned salmon, or any kind of cooked salmon)

Directions

Cook the pasta according to packaging instructions.

Meanwhile sauté the garlic with 2-3 tbsp of olive oil in a large pan, when it starts to brown add the wine to deglaze it using a wooden spoon. Stir until it evaporates a bit! Add the spinach and cook until wilted, then finally toss in the ricotta and lemon zest. Add half of the cooking water to help smooth the ricotta. When the pasta is cooked toss it in the sauce with the salmon as well.

If it looks dry to you add more of the cooking water it until it gets to a creamy consistency. Taste and add some salt and pepper to your liking.
