I bought a lot of fresh veggies yesterday at the farmers' market and always try to use them quite quick so they are still super fresh and crunchy, especially for salads.


  • 2-3 medium little gems
  • 3-4 radishes
  • 1/2 avocado
  • 1/3 cup of walnuts
  • 1/3 cup of feta cheese, crumbled
  • 1/2 cup of sugar snap peas
  • 1 bunch of chives, chopped
  • Green goddess dressing: ½ cup Greek yogurt ½ cup vegenaise, 1 tbsp tarragon, ½ cup basil, ⅓ cup cilantro, 2 scallions, ½ tsp salt, 1 lemon juiced and zested, 1½ tsp maple syrup


Wash the lettuce, cut them in 2 lengthwise and repeat so you have four parts of each head.

Place on a plate. Thinly slice the radishes and roughly chop the sugar snap peas and walnuts and add on to the lettuces.

Sprinkle the feta all over as well as the chives.

Assemble all the dressing ingredients in a  food processor and bend until smooth and combined. Drizzle all over the salad and finally add on some chopped avocado.

I usually to a couple of grinds of black pepper and some flaky salt.
