Mallorca style veggie tray bake

This is an easy way to get veggies on the table. You can add or switch veggies as long as they al kind of have same shape and consistency so they cook nicely together!
Preheat the oven to 400F. Place the potatoes, onion, garlic, zucchini and mushrooms in a baking dish. Drizzle with the olive oil, some salt and pepper and toss together.
Bake uncovers for 20 minutes. Stir in the tomatoes and fresh basil and cook fr another 10 minutes.
Enjoy as a side, on its own with quinoa, brown rice or pasta.
