I love kale so much, I can eat it raw, sautéed, crisp, on its own or as a side and even in my smoothies.... This salad is really nice and fresh with the citrus added and gets a nice crunch from the hazelnuts!

Ingredients

  • 1 bunch of assorted kale, stems removed and chopped
  • 2 blood oranges, zested, 1 peeled and sliced and the other juiced
  • 1/2 cup of hazelnuts, toasted
  • 3 tbsp of olive oil
  • 1 tbsp of white wine vinegar
  • 1/2 tsp of dijon mustard
  • 1 tbsp of honey
  • Salt and pepper

Directions

Combine the oil, vinegar, orange zest and juice, honey, salt and pepper in a sealed jar and shake.

Once the dressing is done, pour over the kale in a large bowl and toss to coat. Let it rest for a little while.

Add the oranges and hazelnuts just before serving.
