Marinated Salmon on Couscous Pilaf

My kids kind of get bored of quinoa so as no one is gluten free in our house, I thought I would try couscous... Turned out a huge success!! I think it is good to mix things up in the kitchen.

Ingredients

  • 5 small salmon filets
  • 1 pack of organic of couscous
  • 2 tbsp of grated ginger
  • 2 garlic cloves, minced or grated
  • 2 tbsp of maple syrup
  • 2 cups of sliced sugar snap peas
  • 4 scallions, finely chopped
  • Salt and pepper

Directions

Combine the maple syrup, ginger, garlic and soy sauce and pour over the salmon. Make sure it is well coated and leave it to rest for 15-20 minutes at least.

Meanwhile cook the couscous to packaging instructions and prep the veggies.

Sear the salmon for 2-3 minutes on each side (depending on the thickness of the salmon you may want to leave it a bit longer or not). Reserve the sauce from the marinade to pour over the dish later.

Plate the couscous with the sugar snap peas and top with the salmon and a drizzle of the sauce.

This would be really good also with english peas.
