Meatballs with any meat and orzo pasta

I feel like everyone needs a good, super simple and tasty meatballs recipe in their repertoire. This one works with any meat, so feel free to adapt with what you have at hand!

Ingredients

  • 1 lb of ground meat (I am using turkey today)
  • 1/2 cup of breadcrumbs ( I use homemade, but any kind works)
  • 1 egg
  • 1 tsp of both salt and pepper
  • 1/4 tps of chili flakes
  • 1 small shallot, minced
  • 1 garlic cloves, minced
  • 1/4 cup of chopped parsley or basil (or a combo)
  • Olive oil for cooking
  • 1 bag of orzo pasta
  • 1 cup of cherry tomato cut into 2
  • 2-3 tbsp of olive oil
  • 1 bunch of fresh basil, chopped
  • Fresh parmesan

Directions

In a large bowl, gently combine all ingredients except last 5 ones. Roll into 1 1/2-inch balls. Transfer to a baking sheet.
Broil until golden and firm, 7 to 10 minutes. Or fry in oil until golden browned all over and cooked through.

Meanwhile toss the cherry tomatoes with 3 tbsp of olive oil, the basil and season with salt and pepper. Leave on the side for now.

Cook the orzo pasta according to package instructions, toss with the cherry tomatoes and add the meatballs.

Sprinkle with more salt before serving and grate some fresh parmesan.
