I think lentils are often overlooked and sound scary to prepare when in fact they taste delicious and are really easy! Just add a couple of veggies and water, let it cook until tender and done!
Put the lentils, carrots and onions together in a pot and cover with water. Bring to a boil, then cover, reduce to a simmer and let cook for 20 minutes until lentils are soft ( NOT MUSHY).
Drain when they are ready, discard the bay leaf and toss with the celery, tomatoes, olive oil, lemon and spices. Taste and adapt with more salt, pepper or lemon juice if needed.
