Mediterranean salad

I am adding dates to this salad which makes the whole dish in itself. There is also a touch of cinnamon in the dressing which gives it some warmth and sweetness and balances the flavors nicely.


  • 5-6 cups of mixed greens
  • 1 cup of chickpeas, cooked (I used some from a jar that I rinsed)
  • 1/2 watermelon radish
  • 6 Medjool dates
  • 1 avocado
  • 1 cup of cauliflower rice (raw)
  • 1/3 cup of sliced toasted almonds
  • Vinaigrette: 1 lemon, 1 tbsp of apple cider vinegar, 1/4 cup of olive oil, 1 pinch of cinnamon, salt and pepper


Wash and dry the mixed greens and transfer in a large serving bowl.

Thinly slice the radish and cut into matchsticks. Remove the pits from the dates and roughly chop them.

Whisk together the ingredients for the vinaigrette.

Add all the other components to the greens, drizzle the vinaigrette and season with some salt and pepper.

I think this is my new favorite salad, I have had 3 times already and plan on making it again soon!
