Melted goat cheese and fig salad

When figs are in season this salad is the bomb! It is the perfect balance of sweet and savor ( if you like that of course). You oddly also use feta or fresh goat cheese, which would also be super delicious!

Ingredients

  • 2 cups of chopped lettuce
  • 1 goat cheese croton ( sliced in 2)
  • 3-4 fresh figs
  • 2 tbsp of sliced almonds ( used roasted ones from Trader Joes)
  • 1/4 cup of cherry tomatoes
  • Vinaigrette: 1 tbsp apple cider vinegar, 1/4 cup olive oil, 1 tbsp of honey, salt and pepper

Directions

Roast the goat cheese "crotin" for 3-4 minutes on 375F until it starts to melt.

Wash and prep the lettuce. Rinse and cut the figs and tomatoes either in 2 or 4 pieces.

Mix together the vinaigrette ingredients.

Assemble the salad by tossing the lettuce with some of the dressing, add all the rest on top and drizzle with 1-2 more tsp of the vinaigrette. I like finishing it with salt and paper and another dollop of honey on the melted cheese.
