Mini salmon cakes

Makes 8-10 small ones

If you ever wonder what to do with leftover cooked salmon, well this is for you!!! I serve here as an appetizer or snack with either sweet chili sauce or sriracha aioli an dit is so good!


  • 2 cups of cooked salmon, flaked
  • 1 egg, beaten
  • 1/4 cup of almond meal
  • 1/4 cup of breadcrumbs ( I used cauliflower crunch)
  • Salt and pepper
  • 2 tbsp of avocado oil
  • Sauce: sweet chili or sriracha aioli


Combine the salmon (make sure it is finely flaked) with the egg, the almond meal, the breadcrumbs, some salt and pepper.

Using  a small ice cream scooper, form mini cakes and put them on a plate.

Heat up 2 tbsp of avocado oil and cook the cakes for 2 minutes on each side until golden brown and  the edge are crispy. Dip in the sauce and enjoy!!!
