Mini shortbread tarts with peach jam

Makes 8 tartlets

I'm enjoying the jam I made a few days ago with everything. I thought it would super yummy to make mini jam tarts. I am using almond flour only here so it GF and it s absolutely delicious. You can always search fro a regular shortbread dough recipe of buy good quality pie dough.


  • 1 cup of almond flour
  • 2 tbsp of sugar
  • 2 tbsp of malted coconut oil
  • 1 tbsp of water
  • 1 tsp of vanilla extract
  • 8-10 tbsp of peach jam


Preheat the oven at 350F and line up a baking sheet with parchment paper.

Combine the flour, with the oil, sugar, water and vanilla extract. Using your hand take little pieces of the dough and form 8-10 small balls.

Using your fingers shape the balls into little tartlets (like little nests) with the borders coming up a bit.

Spoon some of the jam in the middle and bake for 8-12 minutes until the dough is golden brown.

Let them cool for a few minutes an enjoy!
