
Mini Spinach, Ham and Feta Quiches

Our dinner tonight is mini quiches and a nice green salad as a side and a plate of crudités. Eggs should not be only for breakfast or brunch, right?? Plus I always make extra and store them in freezer for school lunches!!!

Preheat the oven at 375F.
Roll the dough and cut 12 - 4 inches circles ( I use a upside down bowl and cut around with a knife).
In a lightly greased muffin pan, place the dough and press at the bottom and on the edges. Place in the fridge to keep cold while you prepare the egg mixture.
Whisk the eggs with half and half and fold in the ham and spinach with 1/2 tsp of salt and 1/4 tsp of pepper.
Spoon the mix in the mini dough cups and sprinkle some feta on top. Bake for 22-25 minute until crust is golden brown and eggs are set.
Enjoy at room temperature or simply reheat when you wanna eat them!
