Miso glass noodle soup

This is a delicious soup packed with goodness. You can add as much or as little as you want here, feel free to adapt to your liking and what you have. You can buy already made miso broth or make your own by mixing veggie stock with miso paste, I like the yellow one the best, it is a nice subtle flavor.


  • 4-5 cups of miso broth
  • 1 pack of glass noodles
  • 1 block of extra firm organic tofu, cut into small cubes
  • 2 cups of baby spinach
  • 1 cup of shelled edamame


In a medium pan, heat up the broth to a gentle boil, add in the glass noodles and cook according to package instructions. When they are almost cooked add in the the rest of the ingredients until everything is heated up.

Taste and adapt seasoning, I like adding a bit more soy sauce usually and some chili flake to mine.
