This is similar to my poke recipe although the miso in there adds another dimension!! Plus it look really Pretty!

Ingredients

  • 2 cups of cooked sushi rice
  • 1 avocado, peeled and pitted
  • 1 cup of edamame, de-shelled
  • 1/2 lb of fresh ahi tuna
  • 1 tbsp of miso
  • 1 tbsp of rice vinegar
  • 1 tbsp of soy sauce
  • 1 tsp of maple syrup
  • 1 tbsp of sesame oil
  • 1 tps of wasabi
  • 1-2 tbsp of sesame seeds
  • 1-2 nori sheet
  • Optional: seaweed salad (store bought)

Directions

Cut the tuna in really small cubes and transfer to a bowl.

Combine the miso, rice vinegar, wasabi, soy sauce, sesame oil and maple syrup and add to the tuna. Leave to rest for a couple of minutes.

Meanwhile cut the avocado into small cubes, heat up the sushi rice and have all the other ingredients ready.

Using a tall round cookies cutter that you've placed on a plate start making the little towers. Start with rice, the edamame, avocado and finish with the tuna. Sprinkle some sesame seeds and cut off little pieces of nori sheets as well. Add a little bit of seaweed salad as well, it gives it a nice finishing touch (plus it is super healthy).

Remove carefully the cookie cutter and keep on going. You can also simply serve that in bowls and it will be equally delicious!
