I love this kind of cake. I make a great dessert but can be eaten for breakfast as well with some yummy greek yogurt or a drizzle of nut butter or something....The other good news is that it is super easy to make.


  • 2 cups of almond flour
  • 1/2 cup of coconut flour
  • 1/2 cup of arrowroot powder
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 2 eggs, room temp
  • 1/4 cup of almond milk ( or other plant based milk)
  • 1/2 cup of maple syrup
  • 1/4 cup of coconut oil
  • 1/2 tbsp apple cider vinegar
  • 1 tsp of vanilla
  • 3 cups of mixed berries


Preheat your oven to 350 F and grease a 9x13-inch sheet pan.

Add all of the dry ingredients to a mixing bowl and stir together.

Combine  all of the wet ingredients to a separate mixing bowl and whisk together. Then, pour the wet ingredients into the dry and whisk for about 30 seconds, until you have a batter.
Pour the batter into the greased pan and use a spatula to flatten the top.
Add the berries to the top of the cake and transfer it to the oven. Cook for 35-40 minutes, or until golden across the top (not just the edges).
Once it's cooled, slice and serve.

Enjoy as is or with cream, whipped cream or even greek yogurt.
