Mushroom feta tart

This is one of the most delicious and easiest fall appetizer... The flavors of the mushrooms with the onion and feta are just the perfect combination! I use frozen store bought puff pastry which makes this a no brainer!


  • 1 sheet of puff pastry (store bought, thawed)
  • 2 cups of mushrooms (I used Cremini, but feel free to mix it up here)
  • 1 purple onion, peeled and sliced
  • 2 tbsp of olive oil
  • 1 cup of feta
  • Fresh thyme
  • Salt and pepper
  • 1/4 cup of parsley, chopped
  • 2 tbsp of balsamic vinegar


Preheat the oven at 400F.

Clean the mushrooms using a damp paper towel, do not run them underwater otherwise they will soak it in and taste rubbery. Remove the end the stems and slice them.

Place the puff pastry on a lined baking sheet, prick it with a fork all over, brush 1 tbsp of olive oil and sprinkle the thyme leaves. Pre-bake for 15 minutes.

Meanwhile sauté the onion with the mushroom and the rest of the olive oil until nicely cooked.

remove the pastry from the oven, spoon the mushrooms on top of it, add the feta and return to oven for another 20-25 minutes until pasty is golden brown.

When the tart is cooked, sprinkle some fresh parsley, drizzle some balsamic and enjoy!
