Mushroom polenta cakes

This is really easy to make, it is perfect for breakfast, brunch or even dinner if you wanna keep it simple and yummy!
Slice your polenta and place on a baking sheet, alongside with the cherry tomatoes and the fresh thyme. Drizzle some olive oil all over, salt and pepper and cook in the oven at 425 for 15-18 min.
Meanwhile, sauté the onion with olive oil and the mushrooms. Season to taste and when cooked, add the red wine vinegar.
Plate by starting with the polenta, some arugula, then spoon some mushrooms on top and tomatoes. Drizzle some olive oil and season with salt and pepper. Finish with a fried egg on top and enjoy!!!
