This is really easy to make, it is perfect for breakfast, brunch or even dinner if you wanna keep it simple and yummy!


  • 1 polenta pack ( the cooked one, that looks like cylinder shape)
  • 1 onion
  • 2 cups of sliced mushrooms, (I used cremini but I think all kind would work great here)
  • 2 cups of cherry tomatoes
  • 1-2 tbsp of red wine vinegar
  • 2-3 bunches of arugula
  • 3 tbsp of olive oil
  • Salt and pepper
  • A few sprigs of fresh thyme
  • 5 eggs


Slice your polenta and place on a baking sheet, alongside with the cherry tomatoes and the fresh thyme. Drizzle some olive oil all over, salt and pepper and cook in the oven at 425 for 15-18 min.

Meanwhile, sauté the onion with olive oil and the mushrooms. Season to taste and when cooked, add the red wine vinegar.

Plate by starting with the polenta, some arugula, then spoon some mushrooms on top and tomatoes. Drizzle some olive oil and season with salt and pepper. Finish with a fried egg on top and enjoy!!!
