I know cooking fish can be intimidating. I promise you that this recipe is full proof! Adding the mustard marinade really renders the fish flaky and tasty! All that in less than 20 minutes!


  • 5 small pieces of cod
  • 1 tbsp of Dijon mustard
  • 1 tbsp of grainy mustard
  • 2 tbsp of greek yogurt
  • 2 tbsp of white wine
  • 1 tbsp of capers
  • 1-2 cups of Cremini mushrooms, sliced
  • 2 tbsp of olive oil
  • 2 tbsp of micro greens
  • 2 tbsp chopped parsley


Preheat the oven at 375F.

Whisk together the mustards, yogurt, wine, capers and some salt and pepper.

In a large baking dish, arrange the sliced mushrooms, drizzle with olive oil. Place the fish on top and brush the marine all over.

Roast it for 10-12 minutes, until fish is cooked through and flaky. Sprinkle the micro greens and parsley and serve immediately.

Enjoy with brown rice or mash potatoes.
