I am a sucker fro cleansing and detoxing in January... Even though I eat pretty healthy all year long, I try to go the extra mile in January. I feel that it kind of sets to the tone to a good start of the year. And god knows that after the year we had in 2020, we need a fresh start!!!!

Ingredients

  • 2 cups of arugula
  • 6-8 Brussels sprouts
  • 1 small watermelon radish ( or 4 regular ones)
  • 1 avocado
  • 1/3 cup of pomegranate seeds
  • 2 small persian cucumbers
  • 1/2 cup of micro greens
  • 1/2 cup of cooked quinoa
  • 1/4 cup of mixed toasted nuts
  • Lemon ginger dressing: 2 lemons, 1/3 cup of olive oil, 1 tbsp of grated fresh ginger, 1 clove garlic, 2 tbsp raw honey

Directions

Wash the arugula, thinly cut the Brussels sprouts and watermelon radish. Cut the cucumbers and discard the ends.

Arrange the salad by dividing the ingredients into 2 plates.

Make the dressing by grating the garlic, zesting and juicing the lemons and whisking it all together until emulsified. There might be some extra but I always do that so I have some for another salad later in the week.

Drizzle the dressing on the salads and sprinkle some flaky salt and black pepper.
