My detox salad

I am a sucker fro cleansing and detoxing in January... Even though I eat pretty healthy all year long, I try to go the extra mile in January. I feel that it kind of sets to the tone to a good start of the year. And god knows that after the year we had in 2020, we need a fresh start!!!!
Wash the arugula, thinly cut the Brussels sprouts and watermelon radish. Cut the cucumbers and discard the ends.
Arrange the salad by dividing the ingredients into 2 plates.
Make the dressing by grating the garlic, zesting and juicing the lemons and whisking it all together until emulsified. There might be some extra but I always do that so I have some for another salad later in the week.
Drizzle the dressing on the salads and sprinkle some flaky salt and black pepper.
