This super easy and super delicious cookie recipe is great for breakfast or an afternoon snack! Full of nutritious ingredients, it is a great way for kiddos to start the day...
Preheat the oven at 350F.
Melt the coconut oil and whisk together with the eggs, vanilla and honey.
Combine all the other ingredients in a large bowl and stir in the wet ones.
On a lined up cookie sheet, scoop up the batter 6 cookies at a time and bake for 9-12 minted until golden brown and crispy.
Repeat with the rest of the batter and keep in a airtight container, for a few days or in the freezer.
